
Ok so I did some research on pomegranate seeds recently & different ways to preserve them...(because I LOVE them!) Also they are known to be good for your heart! ;o)
So I took some & froze them (many websites said to freeze them in a single layer & that they can be good for 3-6 months. And another site said that after freezing them they are only good for juicing. I will have to see about that when I decide to pull them out of the freezer to eat!) They are such a great snack after frozen! We had some today & I couldn't stop eating them!!! haha
Well then I looked to see if you can dry them or bake them. I found A Good Cookie Recipe!!! that I will be trying mmmmm! However, The only reference to actually drying them was sun dried is the best. So I made a decision to attempt to do it myself in the oven! Scary I know haha ;o).
I placed 12 pomegranate seeds onto a cookie sheet & put it in the oven at 200 degrees for 15 minutes. I pulled them out & they turned a pale purplish color (I was so worried!) Then I flipped them over with a spatula & put them back in for 1/2 hour.
When the time was up I pulled them out & they looked dead! LOL. I attempted to try one. OH MY GOSH!
Better than dried cranberries yall! They have a nutty fruity flavor when baked!
Ok so then I dumped the whole bowl I had of seeds onto the cookie sheet & I am doing the process again(ok I would say for bigger batches an hour or so is good...just make sure you flip them every 20 min or so and make sure they are not stacked)! And I will be putting them into my Almond Granola that I am going to make tonight! mmmmmmmmmmm. (I guess all the recipes for roasted pumpkin seeds got me thinking! ;o)).
Title: Almond Granola
Ingredients:
2 cups brown sugar
2/3 cups butter
1/2 cup honey
4 cups oatmeal
2 cups Rice Krispies cereal
2 Tbsp cinnamon
2 cups sliced almonds
2 cups raisins
1 cup dried apples, diced
1 CUP DRIED POMEGRANATE SEEDS
Directions:
Arrange oven racks in center & upper third of oven. Heat oven to 350 degrees. Line 2 cookie sheets(said jelly-roll pans) with foil.
Heat sugar, butter & honey in a medium saucepan over medium-high heat until butter is melted and sugar dissolved, about 5 minutes.
Meanwhile, combine oats, Rice Krispies, cinnamon and almonds in a large bowl.
Pour melted-butter mixture over oat mixture and toss to coat. Divide and spread mixture between prepared pans. Bake 20-25 minutes, stirring every 10 minutes, rotating sheets between racks until granola is well toasted.
Cool granola on pans, 5 minutes, then transfer to a large bowl. Stir in raisins and apples and cool completely.
(Can be made ahead. Store in a resealable plastic storage bag up to 2 weeks.)
I can guarentee that it won't last that long! :o) You will eat it before 2 weeks are up!

Birdeena, How do you get the pomegranate seeds out of the shell? I love to eat them, but they come out in one's and two's.
I'm also sure you can use your microwave to dehydrate them as well as other things. See if the manual gives instructions for dehydrating things.
It took a LONG time to get the seeds out haha. You slice the shell just enough so that you don't cut through the whole thing & you do a few slices like you would an orange...then you just peel the shell away. It still takes some time, but it is good. Plus you may want to wear black or something cause it will turn your clothes purple if you get sprayed...Also I heard placing it in a bowl of really cold ice water helps the seeds come out...I tried it & it works pretty well. ;o). And Kim YES you have to eat them! If not please send them to me haha! My dad also says that they protect from getting the flu. They are the best antioxidant out there!
